Quinoa!

I have a confession to make: I think I love the idea of quinoa more than I actually like eating quinoa. But it doesn’t stop me from buying it in bulk from Costco!

I first tried quinoa at a friend’s house when I was visiting and it was mixed with cucumber, tomatoes and some vinaigrette. Quinoa has a texture that is different from anything I’ve ever had. It’s kinda like a little bean with a harder, almost crunch to it. It also has a lot of nutritional value. It has plenty of protein, calcium, and fiber.

Unfortunately, like most things bought from Costco the portion I bought is pretty sizable and could probably last me a week. I can only have a few spoonfuls at a time before I get tired of it. But until I finish this Costco quinoa salad, I have plenty to last me for a long, long time!
